Pizza1889 popped up in Cambridge, to the surprise of many at the end of September.
Currently trading out of two state of the art shipping containers in London and Kent – the bright blue unit – the 3rd in the small chain, arrived out of nowhere as a turn key operation. Working closely with SpaceandPeople – Europe’s largest destination media and retail specialist – who facilitated the deal, this was an exciting move for the company opening its first site with Landsec at their Cambridge Leisure Park.
Pizza1889 offers authentic stone baked pizzas prepared and cooked in minutes by fully trained pizza chefs. The outlet operates from a specially designed 40ft 10 tonne shipping container holding a state-of-the-art six-foot stone oven which produces heat of around 450 degrees to ensure a truly superb, traditional pizza cooked within minutes.
Pizza1889 uses only the freshest ingredients sourced wherever possible from Italy. Its dough and rich tomato sauce are all handmade onsite. Cheese such as Mozzarella di bufala & Fior di latte and meats like Salami di Napoli & Neapolitan sausage are all sourced through Italian suppliers.
SpaceandPeople’s tailored and consultative approach to finding the right space for us was an instrumental element to making this successful. Space may be limited but use of space is maximised to create a unique catering experience. The concept provides an opportunity to rethink the way takeaway outlets can produce fresh artisan food quickly in a friendly, approachable way. An extraordinary eat in, takeaway and delivery pizza business operating out of a shipping container. Easily assembled or moved within hours, Pizza1889 is a brilliant example of longer-term outdoor commercialisation. Using only small pockets of landlords unused space the idea is especially appealing at a time where larger retailers and restaurant chains choosing traditional in-line retail are reducing in size.

Whilst the show and theatre of the cooking is customer facing, Pizza1889 have also spent considerable time refining the unit, looking at the business model and developing the internal infrastructure. Trading for 4 years, the owners now feel the business is finally strong enough to support growth. Both the customer offering along with its improved business operating systems, Pizza1889 is ready, competent and confident enough to roll out new stores.
A fourth site will launch in Bristol before the end of the year and further opens are lined up for 2019. Pizza1889 is looking forward to delivering this amazing little concept and real, authentic, fresh pizza all over the country.
